Cookie Day: How to Make Vegan Maple Cashew Cookies

vegan maple cashew cookies These vegan maple cashew cookies are so divinely sweet, and tempting. My dad hadn’t been very well and I went to visit him to hopefully cheer him up. I suggested we do some baking so we scrounged up some cookie ingredients from the pantry. With some tunes playing in the background, pretty quickly the apartment was full of yummy cookie smells and our faces were covered in big smiles. So basically delicious vegan goodies saved the day

Vegan Maple Cashew Cookies
  1. 1 cup plain flour
  2. 1/2 cup sugar (caster/coconut/white/whatever)
  3. 1/2 cup vegan butter
  4. 1 tspn vanilla essence
  5. 1 tspn baking powder
  6. 3 tbsn maple syrup (adjust to taste)
  7. 1/2 cup cashews chopped
  8. Zest of 1/2 a lemon

  1. Preheat oven to 175 degrees Celsius
  2. Cream the butter and sugar (if you don't have any electric beaters, just use a wooden spoon and some determination, it's actually pretty easy)
  3. Add all other ingredients
  4. Mix everything together
  5. Bake for 10-15 minutes until they start to get golden
  6. Now you just have to try sharing the finished product!

Note from the editor: These vegan maple cashew cookies are seriously top shelf cookie heaven. I baked them and the entire house smelled like snickerdoodle coconut cashew maple sweetness. Remember back when you were young and you wanted to eat all the cookie batter? Oh wait, that’s still the case, right? Well pro-tip fam, you can actually eat this cookie batter and not have to end up feeling sick afterwards. For those of you who are gluten free, you can also change out the regular flour for something more gluten free friendly easy. But my favourite part of this recipe is how easy it is to make, and how it basically has so few ingredients, but yet is so delicately sweet and yummy, you would think a lot more work went into these cookies than what actually went into them.   1. Just made these! Doubled the recipe, and the only change was I used 3 instead of 4 tablespoons of maple syrup. Really delicious! Thank you!
