 Pancakes only for breakfast? It certainly doesn’t have to be this way. More like pancakes for breakfast, dinner or dessert! We often associate pancakes with wheat, eggs, milk, and lots of sweet maple syrup, but as you can see the pancakes on are anything but boring these days and most are going wheat-free and animal product free.

  A couple of years ago I started to experiment with pancakes in order to make them healthier.

 A couple of years ago I started to experiment with pancakes in order to make them healthier. I was surprised by how incredibly tasty and fluffy they became, even though I didn’t use any of the traditional ingredients, such as egg and wheat. And by changing the ingredients I effectively turned a dessert into a main-course. I was eating spinach‐filled pancakes for lunch and loving it!

 You can also make healthy pancakes, which are also especially great if you want your children to have a better diet. When my kids want pancakes I always sneak in some healthy hidden ingredients: a handful of fresh baby spinach to give them more iron, potassium, and folate; some protein powder, which is always a bit tricky when you’re a vegan; sometimes I also use beetroots powder, mostly because of the beautiful color. My kids absolutely love the colors of the pancakes: green, red, blue – or why not mix down some raspberry in the dough to get pink pancakes.

 Of course, colorful pancakes aren’t strictly for children – we adults can certainly use a bit more color in our lives. In my recipe below I use chia seeds, which are super healthy seeds packed with omega-­‐3, fiber, and protein. I also use buckwheat flour, which makes the pancake gluten free.

It’s common knowledge nowadays that gluten has a strong inflammation causing effect and is extremely detrimental to our health. That’s not just for the gluten intolerant, but for all of us. Pancakes can then be made both healthy and delicious. Thin or thick, big or small, sweet or salty, for breakfast, dinner or desserts, it ́s always a great idea. You can combine them with so many things and it takes no time to make.

Ingredients
  1. 1banana
  2. 0,6 cup buckwheat flour (optional flour)
  3. 1 tsp baking powder
  4. 1‐2 tsp chia
  5. 1 cup almond milk (optional milk)
Add ingredients to shopping list

Instructions
  1. Mix it all ingredients together in a bowl
  2. Fry them in coconut oil until they're golden brown
