These muffins are one of my favorites, full of flavor. Orange zest never goes wrong. You’ll be so enchanted by the smell coming out of the oven! They are light, fluffy and oh so sweetly luxurious. They are good for breakfast or even as a midnight snack with some chamomile tea.

Vegan Orange Oatmeal Muffins
Serves 12
Zesty and amazing vegan orange muffins made with oatmeal flour
Ingredients
  1. ¼ cup (55g) oatmeal flour
  2. 1 cup (220g) whole wheat flour
  3. 2 tablespoons (30g) cornstarch
  4. 1 tablespoon (15g) baking powder
  5. 1 teaspoon (5g) salt
  6. 1 cup (220ml) almond milk
  7. 1/3 (55g) cup coconut oil
  8. ¾ cup Brown or coconut sugar
  9. 1 teaspoon (5g) vanilla extract
  10. 3 tablespoons (45g) orange juice
  11. 2 tablespoons orange zest
1 flax egg
  1. 3 tablespoons of flax seeds combined with 3 tablespoons of water.

Instructions
  1. Preheat oven to 180ºC or 350ºF
  2. Combine the dry ingredients in a bowl.
  3. Add the flax egg, orange juice, melted coconut oil, vanilla and combine until you have a smooth mixture.
  4. Add the orange zest and the almond milk while you mix, until you incorporate all of the ingredients.
  5. Pour the mixture in a muffin baking pan lined with muffin papers or greased.
  6. Bake at 180ºC or 350ºF for 20-25 minutes
