Vegan Strawberry Banana Smoothie Bowl with Coconut
Have you ever thought about how your food choices might be impacting the lives of others and the environment? I didn’t, I never thought twice about it or the consequences it had on others, the environment and my health when it came to food. I was just doing what I was taught, copying those before me. It’s getting close to a year now that I have been vegan, and what a marvellous awakening it has been! I’ve learnt so much about animals and the environment in this time and have grown to love this way of living, I have never felt so good!
When I decided to go vegan I had no idea what I was doing! I knew very little about cooking so cooking with only plants I thought would be a challenge.. but it was so much easier than I expected!
It felt so right and uplifting to make that decision, a decision I will never turn away from. I find so much joy in food now. With the warmer days rolling in, I have been going crazy over smoothie bowls, I could have them for breakfast and lunch!
This strawberry and banana Smoothie bowl is a perfect way to start any day! With strawberries, bananas and coconut, this bowl is healthy yet creamy at the same time.
- 1 cup frozen Strawberries
- 1 frozen banana
- Handful of frozen Kale
- 1 tbsp of Peanut butter
- 1 tbsp of Chia seeds
- 1 Medjool date
- ½ cup of Plant based milk (I used oat milk)
- 4 tbsp of Coconut milk
- Blend all ingredients together and serve! Top with favorite fruits, nuts, seeds or cereals!
- Tip: To add thickness to the smoothie you could add in some more frozen berries, or add more milk to thin it if needed.
