Have you ever thought about how your food choices might be impacting the lives of others and the environment? I didn’t, I never thought twice about it or the consequences it had on others, the environment and my health when it came to food. I was just doing what I was taught, copying those before me. It’s getting close to a year now that I have been vegan, and what a marvellous awakening it has been!  I’ve learnt so much about animals and the environment in this time and have grown to love this way of living, I have never felt so good!

When I decided to go vegan I had no idea what I was doing! I knew very little about cooking so cooking with only plants I thought would be a challenge.. but it was so much easier than I expected!strawberry banana smoothie bowl

It felt so right and uplifting to make that decision, a decision I will never turn away from. I find so much joy in food now. With the warmer days rolling in, I have been going crazy over smoothie bowls, I could have them for breakfast and lunch!

This strawberry and banana Smoothie bowl is a perfect way to start any day! With strawberries, bananas and coconut, this bowl is healthy yet creamy at the same time. 

 

Vegan Strawberry Banana Smoothie Bowl with Coconut
This delicious Vegan Smoothie Bowl is easy and fast to make, and oh so bright and sweet with luscious strawberries and creamy coconut.
Ingredients
  1. 1 cup frozen Strawberries
  2. 1 frozen banana
  3. Handful of frozen Kale
  4. 1 tbsp of Peanut butter
  5. 1 tbsp of Chia seeds
  6. 1 Medjool date
  7. ½ cup of Plant based milk (I used oat milk)
  8. 4 tbsp of Coconut milk
Add ingredients to shopping list

Instructions
  1. Blend all ingredients together and serve! Top with favorite fruits, nuts, seeds or cereals!
Notes
  1. Tip: To add thickness to the smoothie you could add in some more frozen berries, or add more milk to thin it if needed.
